Traditional Italian Tiramisu 提拉米蘇
Ingredients 材料
Coffee Dip:
1 1/2 c Espresso Coffe 2 tsp Sugar 咖啡: 1 1/2 濃咖啡 2茶匙 糖 |
Base:
10 oz lady fingers (aprox 40) 2 tbs Bitter Cocoa Powder 底: 大約40根指形小鬆糕 2 大匙可可粉 |
Zabaglione Filling:
4 Egg Yolks 1/2 c Sugar 1/2 c Marsala Wine 1 lb (450gr) Mascarpone Cheese (room temp) 1 c Heavy Whipping Cream |
薩巴里安尼
4 個蛋黃 1/2 杯糖 1/2 杯 義大利馬沙拉白葡萄酒 450g 義大利軟乳酪(馬司卡膨) 1杯鮮奶油 |
Prepare Espresso 準備咖啡
Preparing the Zabaglione Filling 準備薩巴里安尼
4.Transfer the bowl over a pn of simmering water, and whisk until the cream thickens. The zabaglione will thicken just before boiling point, when small bubbles appear.
把鍋子隔著熱水攪拌,至醬變的濃。在滾起,開始冒泡泡時,就好了喔! |
5.With a rubber spatula mash the mascarpone cheese in a bowl until creamy.
再另一個碗裡,用塑膠抹刀,把義大利軟乳酪(馬司卡膨)壓到變軟。 |
6.Add the zbglione into the mscarpone cheese, and beat to mix very well.
加入之前調的醬 |
7.Whip the cream. Fold the whipped cream into the zabaglione cheese cream, until smooth.
把鮮奶油打發,加入上面做的,用摺疊方式辦均勻。 |
Assembling the Cake 組合蛋糕
1.Lightly soak the ladyfingers in the coffee, one at a time. Place them in one layer in a container of about 12 x 8 inches. Approximately 2 inches deep, (30 x 20 cm), approx 4 cm deep)
指形小鬆糕沾咖啡,一個一個用,排入一個大約 12 X 8 吋的烤盤,大約 4 公分深。 |
2.Evenly distrubute hlf of the zabaglione cream over the ladyfingers
把之前作好的薩巴里安尼塗上。 |
3.Repeat the step with a second layer of ladyfingers, and top with the rest of the cream.
再做一層 |
4.Sprinkle with the cocoa powder and refrigerate for about 3 - 4 hours
最後,灑上可可粉,就完成啦 |
Note:
This is not the type of Tiramisu that you can cut up like a cake. If you follow the recipe, you'll get a nice rich coffee and marsala wine taste to it. This is the type of Tiramisu that you serve with a spoon.
Oh! You can use it as a b-day cake....VERY funny when you blow the candles... hahahaha~~~
ohoh!! For the Mascopone Cheese..... it really does make a difference with real Italian one and none Italian ones......
