2 Tbsp extra-virgin olive oil (25ml) 1 onion, chopped 2 cloves garlic, minced 1 carrot, finely chopped 1 stalk celery, finely chopped 3 cups sliced mushrooms (750ml) 1 sweet red or yellow pepper, chopped 1 1/2 tsp each dried basil and oregano 1/2 tsp each salt and pepper 2 can (each 28oz/796ml) tomatoes 2 Tbsp tomato paste (25ml) 1 Tbsp balsamic vinegar (15ml) 4 cups rigatoni pasta (12oz/375g) 2 cups shredded provolone cheese (500ml) 1/2 c grated parmesan cheese (125ml) |
Directions:
7. Sprinkle with provolone and Parmesan cheese. Bake in 375 F (190 C) oven for about 30 minutes or until bubbly. Makes 8 – 10 servings. |
