鹽酥雞 Taiwanese Popcorn Chicken
材料
A 雞胸肉 1/2塊 胡椒鹽 適量 B 蔥未 10克(2根) 薑未10克 蒜未 40克 五香粉 1/4 茶匙 小蘇打 1/4 茶匙 水 50CC 米酒 1 大匙 鹽 1 茶匙 糖 1 大匙 醬油膏 1 大匙 C 九層塔 100克 地瓜粉(粗) 100克 D 胡椒鹽 適量 辣椒粉 適量 |
Ingredients
A Chicken Breast 1/2 piece White pepper some BGreen onion ends 10g (2sticks) Ginger10g Garlic 40g 5 powder spice 1/4 tsp Baking Soda 1/4 tdp Water 50ml Rice Wine 1tbs salt 1tsp sugar 1tbs Soy sauce paste 1tbs C Basil 100g Sweet Yam Powder (thick) 100g D. White Pepper Some Spicy powder some |
作法:
1~ 雞胸肉去皮,去骨,在平均切成約拇指大小的雞肉塊。九層塔洗淨後瀝乾,剪掉粗梗,備用。
2~所有材料B一起放入果汁機中,大約30秒混合制成醃汁。
3~作法1的雞肉塊放入作法2的醃汁中醃約30分鐘備用。(可以前天晚上先醃好)
4~將做法3的雞塊放入地瓜粉中均勻沾裏上粉,在倒入粗孔篩子上輕輕搖晃,篩掉多餘地瓜粉。
5~ 熱油鍋,帶由溫熱至150 度C,放入作法4的雞塊。炸約2分鐘至表面呈金黃酥脆狀,既可放入作法1的九層塔,數約2秒計可撈起瀝油。
6~食用前灑上適量的胡椒鹽,辣椒粉即可。

2~Place all of ingredient B into food processor or blender, mix till blended, approx 30sec
3~Place chopped chicken in sauce and marinate for 30min or over night
4~place marinated chicken in yam powder, coat well. Use a shifter to rid excess yam powder
5~ Heat oil to approx 150 C, place chicken into oil and deep fry for approx 2 min, find a thick chicken, cut open to make sure it's cooked. Once all the chicken is done, place basil in oil, for only a few seconds till it's crisp.
6~Before eating,while the chicken is still hot, sprinkle on white pepper and spicy powder is desired.

Mix the meat in the sauce, massage the meat a bit to get the sauce in to the meat and for it to be tender.

Place yam flour in a ball, using chopsticks, place chicken in yam flour few pieces at a time. Press the chicken into the flour and both sides, make sure it's well coated.
把地瓜粉放入碗裡,用筷子一塊塊的把雞肉放入粉裡。把雞肉往粉裡壓,兩邊都要,確認每塊肌的包滿粉喔! |
Place coated chicken on a seperate plate to fry. Do NOT let it sit too long becuase it will become soggy.
把沾好粉的雞肉放在另ㄧ個盤子上。 |
When the temperature reaches 150 F, drop the chick in one piece at a time to avoid it sticking. Fry for 2 min, drain the oil and place on plate lined with kitchen paper. The color difference in the middle means that you waited too long before deep fry and the powder got moist. (This was made by kids). If you deep fry it on high temp again, will make it taste better.

While the chicken is still hot, sprinkle on the white pepper mixture.
趁雞還熱熱的,把胡椒粉灑上。 |
